New Zealand is served by One NZ, Spark, 2degrees. 5G in Auckland, Wellington, Christchurch and Queenstown. Good LTE on State Highway 1 and around the main tourist towns. Sparse through Fiordland, the West Coast and the central North Island volcanic plateau.
Prepaid is straightforward to buy at Auckland or Christchurch airport and priced sensibly. Nearly every visitor is doing a road trip, so coverage along the routes matters more than the plan details.
The South Island’s best drives are also its worst for coverage. The road to Milford Sound, the passes through the Southern Alps and much of Fiordland have no service, and these are exactly the roads where weather closures and route changes happen.
New Zealand is out of bundle for European carriers and at the standard day-pass tier for US ones. Australian carriers often price trans-Tasman roaming reasonably.

Very little. The Milford Road through the Homer Tunnel has essentially no service, and it is a route subject to avalanche closures, so check conditions before you set out rather than expecting to look it up en route.
